Homemade Oatmeal and Coffee Cookies with Nespresso On Ice

Nothing is better than a homemade foodie break. I like taking time out of my fast-paced routine to look up for new recipes as I absolutely love trying new food. I just recently found an oatmeal and chocolate chip cookies recipe which I just had to try. As I am a huge coffee lover, I wanted to add a little spin to the recipe and add a few drops of one of my favourite Nespresso capsule to add more taste. I decided to share my own twist with you as I am sure you will devour these cookies as fast as I did!

Ingredients:
1 1/2 cups (375 ml) unbleached all-purpose flour
1 1/2 cups (375 ml) quick-cooking rolled oats
1/2 teaspoon (2.5 ml) baking soda
1/4 teaspoon (1 ml) salt
1/2 cup (125 ml) unsalted butter, softened
1 1/4 cups (310 ml) brown sugar
1/4 cup (60 ml) canola oil
1 teaspoon (5 ml) vanilla extract
1 egg (I replaced the eggs by two tablespoon of nature yogurt as I am allergic to eggs)
2½ tbsp. Nespresso Volluto capsules
Optional: chocolate chips

Steps:
1. Preheat the oven to 190 °C (375 °F). Line two large baking sheets with parchment paper.
2. In a bowl, combine the flour, oats, baking soda, and salt. Set aside.
3. In another bowl, cream the butter, brown sugar, oil, and vanilla with an electric mixer. Add
the egg and beat until smooth. Add the Nespresso Volluto coffee. At low speed or with a wooden spoon, combine with the dry ingredients and add in the chocolate chips.
4. Place 6 to 7 dough balls on each baking sheet. Press the dough to have 2-cm (¾-inch) thick
cookies.
5. Bake one sheet at a time for about 12 minutes or until lightly browned. Let cool on a wire
rack. Serve warm or cold.

Comfort food always comes with comfort drink. To complete my perfect foodie break, I made myself a delicious Leggero On Ice. The preparation is as simple: add ice cubes in your glass, pour a server of your favourite capsule and add cold milk froth to your liking!
