Chocolate Coconut Vegan Ice Cream

The arrival of the warmer season screams for… ice cream! This is why I wanted to share with you very spring and summer inspired recipe that I found on Domestic Fits : the Chocolate Coconut Vegan Ice Cream. It is very simple, easy to do and perfect for all my vegan friends! You only need a few ingredients and you will have an amazing homemade ice cream. IceCreamIngredients – For 2 1/2 cups portion
2 cans of full fat coconut milk
1 1/4 cup of suar
1/2 cup of unsweetened cocoa powder
Local fruits of the season

Steps
1. On medium heat, add all the ingredients in a pot and stir. Allow them to simmer until they are slightly thick (wait for about 8 minutes).

2. Place the mixture in a container and refrigerate until everything is cold – around 4 hours).

3. Add the mixture in an ice cream maker (you can use a Kitchen Aid Ice Cream Maker) and churn until it sets – about 15 to 20 minutes. Freeze the mixture until the desired consistency is reached*.

4. Serve, top the ice cream with fruits of your choice and enjoy!

*The churn time of 15 minutes is for a soft consistency. For another 2 hours of freeze time, you will have a harder scoop ice cream.
